An elegant, vinous, fruity and slightly spicy scent hits the nose. The rum should have some time in the glass to open up completely. But then you also get lots of acidity, freshness, fullness and spice.
The taste is characterized by good acidity and spice. There are citrus, pepper, anise, sour berries, acetone and medicinal notes. The acidity and spice, which is not too sharp, lingers for a long time on the aftertaste. A rum that lasts a long time in the glass and can be enjoyed for a long time.
Even if one were to think that the rum was young due to the relatively light color, this is by no means the case. This full-bodied rum has aged 17 years in tropical climates.
The Versailles still is a Single Wooden Pot Still. There is only this one of its kind left in the world. (along with Port Mourant Double Wooden Pot Still). The still is 250 years old and was originally built for the Versailles Estate by the rock-hard wood called Greenhart. The still has moved on from distillery to distillery in Guyana as they are closed and now stands at Diamond Distillery, which maintains it and takes good care of it.
Back then, 250 years ago, copper was extremely expensive, so you built it in wood. The pot still boiler, however, has a gooseneck in copper. The combination of the old wood kettle and the copper swan neck gives a very heavy distillate. The characteristic features of Versailles are robust, very tasty and aromatic rums. This rum is a history in rum.
