The history behind Cardhu
Origin and development
Cardhu’s story begins in 1811, when farmer John Cumming and his wife Helen began distilling whisky illegally on their farm. Helen was the mastermind behind the operation, becoming known for her cunning in evading excise officers – often disguising the distilling equipment as baking tools and even feigning funeral rituals to hide her activities.
In 1824, Cardhu became one of the first distilleries to obtain a legal license under the new Excise Act. The distillery remained in family hands for generations, with Helen’s daughter-in-law Elizabeth taking over in 1872, showing the significant role of women in Cardhu’s history.
A pivotal moment came in 1893 when the Cumming family sold Cardhu to John Walker & Sons, though they maintained management roles. This strategic alliance ensured Cardhu’s position as a key component in the increasingly popular Johnnie Walker blends.

Today, Cardhu is operated by Diageo, but still honors its founding family’s legacy. The distillery’s character has been shaped by a succession of skilled distillers who have preserved Helen Cumming’s original vision while adapting to changing times.

The craft and production
From raw material to finished product
Cardhu’s production begins with carefully selected Scottish barley. After malting, the grain undergoes a relatively long fermentation period of around 70 hours, which contributes to the fruity esters that characterize the spirit.
The distillery employs six copper stills – three wash stills and three spirit stills – with a distinctive shape featuring a slight upward tilt at the lyne arms. This design increases copper contact and helps create Cardhu’s remarkably clean, light spirit.
Perhaps most significantly, Cardhu is known for cutting its spirit at a higher point than many distilleries, taking only the very heart of the distillation run. This selective approach results in an exceptionally smooth and refined new make.
Maturation and aging
The spirit is primarily matured in American oak ex-bourbon barrels, which impart vanilla, coconut, and honey notes that have become synonymous with Cardhu. Some expressions also see time in European oak, adding depth and spice dimensions.
Aging takes place in traditional dunnage warehouses where the cool, consistent Speyside climate allows for a gentle maturation process that develops complexity without overwhelming the spirit’s intrinsic character.
