Introduction
Edradour, Scotland’s traditionally smallest distillery, creates handcrafted whisky prized for its distinctive character and artisanal production methods. This particular expression, selected by independent bottler Signatory Vintage for their Cask Strength Collection, represents Edradour at its most authentic and uncompromising.
Production Method
- Raw materials: Scottish malted barley, processed in Edradour’s traditional Highland methods at their picturesque farm distillery in Pitlochry, Perthshire.
- Distillation process: Slowly distilled in Scotland’s smallest traditional copper pot stills, preserving the spirit’s robust character and allowing for greater copper contact.
- Maturation: Aged for a full 10 years in a single sherry cask (#218), allowing the whisky to develop rich complexity while drawing color and flavor from the active wood.
- Special techniques: Bottled at natural cask strength (58.5%) without chill filtration, preserving all original oils, esters and flavor compounds as they appear in the cask.
Tasting Notes
- Nose: Rich dried fruits, dark chocolate, Christmas cake, and spiced orange peel with underlying notes of nutmeg and polished oak.
- Palate: Intense sherry influence delivers layers of dried figs, raisins, and walnuts, complemented by dark honey, cinnamon, and cocoa powder. The full cask strength brings a warming peppery spice.
- Finish: Long and satisfying with lingering notes of dark fruits, oak tannins, coffee beans, and a touch of leather that slowly fades, leaving a pleasant warming sensation.
Recommended Serving
- Serving temperature: Room temperature (16-18°C)
- Glass recommendation: Tulip-shaped nosing glass or Glencairn whisky glass
- Serving ideas: First taste neat to experience full cask strength character, then experiment with a few drops of still water to unlock additional aromatic complexity.
- Food pairings: Dark chocolate with high cocoa content, dried fruits, aged cheeses, or enjoyed on its own as a contemplative after-dinner dram.
