Introduction

Kilchoman Sanaig is a core expression from Islay’s farm distillery, named after a rocky inlet northwest of the distillery. Established in 2005 as the first new distillery on Islay in 124 years, Kilchoman represents a return to the traditional farm distillery methods that once defined Scotch whisky production.

Production Method

  • Raw materials: Locally grown barley from the distillery’s farm, peated to approximately 50ppm, and pure Islay spring water
  • Distillation process: Small-batch production in traditional copper pot stills with a relatively short fermentation time that contributes to Kilchoman’s distinctive fruity character
