Introduction
Octomore Edition 07.3 represents Bruichladdich’s continuous quest to challenge conventional whisky-making through extreme peat levels combined with sophisticated maturation techniques. This distinguished expression from the 2010 distillation showcases Islay-grown barley from Octomore Farm itself, creating a terroir-focused whisky that celebrates its island heritage.
Production Method
- Raw materials: 100% Scottish Islay barley grown at Octomore Farm, peated to an extraordinary 169 parts per million (PPM) phenol level, making it one of the most heavily peated whiskies in the world
- Distillation process: Slow distillation in tall, narrow-necked copper pot stills which allows for maximum copper contact and flavor concentration
- Maturation: Aged for 5 years in a careful selection of American bourbon barrels (25%) and Spanish Ribera del Duero wine casks (75%)
- Special techniques: Non-chill filtered and bottled at natural cask strength, with complete barley-to-bottle traceability and 100% Scottish provenance
Tasting Notes
- Nose: Initial waves of medicinal peat smoke, sea spray, and iodine, followed by rich caramel, ripe red berries, citrus zest, and toasted oak
- Palate: Intense yet balanced peat smoke, sweet barley sugar, dark chocolate, tobacco leaf, maritime saltiness, and wine-influenced notes of black cherry and spice
- Finish: Exceptionally long with waves of smoke, honey, dried fruits, and oak spices lingering for minutes, culminating in a perfect balance of sweetness and peat
Recommended Serving
- Serving temperature: Room temperature (16-18°C)
- Glass recommendation: Tulip-shaped whisky glass or Glencairn to concentrate the aromas
- Serving ideas: Best enjoyed neat or with a small drop of spring water to open up its complex layers; allow time in the glass for full flavor development
- Food pairings: Rich blue cheeses, dark chocolate with sea salt, smoked meats, or enjoyed on its own as a contemplative after-dinner dram
