Introduction

Xin Gin is created by Michelle and Gareth McAllister – a married couple with Irish roots and Asian hearts, who after many years in Asia wanted to fuse the best of their two homes into a single bottle. The name “Xin” means ‘heart’ or ‘feelings’ in Mandarin, and this is precisely what the gin carries within it: a deep respect for and love of both Irish and Oriental culture.

Production Method

  • Ingredients: A carefully selected blend of European and Oriental botanicals, including juniper, orange peel, lemongrass, persimmon, dill and cinnamon – a fusion profile that reflects the founders’ two cultural homes.
  • Distillation process: The gin is distilled at Ahascragh Distillery in Ireland, where the botanicals are brought together through a meticulous and controlled distillation process to ensure balance between the European and Oriental flavour profiles.
  • Maturation: Xin Gin is an unaged gin that expresses its character directly through its carefully selected botanicals rather than cask maturation.
  • Special techniques: The botanical composition has been precisely calibrated to create a harmonious meeting between the classic, juniper-led dry gin and exotic Asian flavour components, resulting in a distinctive and boundary-bridging tasting experience.

Tasting Notes

  • Nose: Fresh citrus notes of orange peel and lemongrass open the bouquet, followed by classic juniper and a hint of the exotic, gentle sweetness of persimmon, alongside warm spice tones of cinnamon.
  • Palate: A dry, juniper-led core with fresh and vibrant citrus notes from orange peel and lemongrass. The exotic flavour of persimmon adds a soft and fruity depth, while dill and cinnamon contribute earthy, herbal and lightly spiced undertones.
  • Finish: A long and balanced finish with lingering spice tones of cinnamon, a gentle herbal finish from dill and a fresh citrus aftertaste that rounds off the experience with elegant ease.

Recommended Serving

  • Serving temperature: Serve cold, preferably over ice, to best highlight the fresh citrus and botanical notes.
  • Glass recommendation: A classic balloon or copa glass is recommended to concentrate the complex aromas and provide the best tasting experience.
  • Serving suggestions: Best enjoyed as a classic Gin & Tonic with a premium tonic water, garnished with a twist of orange peel or a few stalks of lemongrass to accentuate the gin’s botanical profile. Also works excellently in a Negroni or as the base of an Asian-inspired cocktail.
  • Food pairings: Pairs beautifully with light Asian dishes such as sushi, dim sum and lemongrass wok dishes. Also harmonises wonderfully with Irish cheeses, smoked salmon and light herb-based vegetable dishes.
