• Maturation: Initially aged in ex-bourbon casks, then finished in handpicked Israeli red wine casks from local wineries in the Galilee and Judean Hills regions
• Special techniques: Matured in Tel Aviv’s hot, humid climate which accelerates aging and creates intense wood interaction (3 years in Israel provides maturation equivalent to much longer periods in Scotland)
