Production Method
- Raw materials: 100% Pedro Ximénez grapes sun-dried on esparto mats to concentrate sugars before pressing, grown in the chalky albariza soils of Andalusia.
- Distillation process: Following traditional solera system methods where the wine is fortified and moved through a cascading series of barrels.
- Maturation: Aged for 15 years in American oak casks following the solera system, allowing for complexity and depth to develop.
- Special techniques: Uses the traditional sun-drying (asoleo) process where grapes are left in the Spanish sun for up to two weeks, concentrating sugars and developing distinctive raisin characters.
