Introduction
Lindores Abbey Distillery is located in Fife, Scotland, on a historic site with deep roots in distilling history – the abbey here is documented as the home of one of the earliest known whisky productions in Scotland, dating all the way back to 1494. This rare single cask bottling has been selected by the acclaimed independent bottler North Star Spirits for their “Obscurities & Curiosities” series, a collection dedicated to showcasing unusual and fascinating casks with remarkable stories to tell.
Production Method
- Ingredients: Malted barley from Scotland, produced at Lindores Abbey Distillery in Fife with a focus on quality and terroir
- Distillation process: Distilled in 2019 in Lindores Abbey’s copper pot stills, which are designed to produce a fruity and aromatic new make spirit
- Maturation: Matured for six years in a smoked Pedro Ximénez sherry hogshead, combining the sweetness of PX sherry with subtle smoky notes from the peated wood
- Special techniques: Bottled at cask strength without dilution at 60% ABV, preserving the cask’s full intensity and complexity – a rare and intriguing approach to Scotch single malt
Tasting Notes
- Nose: Juicy orchard fruits, caramelised sugar, subtle hints of sea spray and a discreet smoky undertone from the peated PX cask
- Palate: Rich and sweet fruits at the core – ripe apples and pears – supported by dark sherry notes from the Pedro Ximénez cask, gentle spices and a light, lingering thread of smoke
- Finish: Long and warming, with caramelised fruit, a touch of peat and spiced sweetness from the sherry cask, slowly fading into a pleasant and well-balanced finish
Serving Suggestions
- Serving temperature: Room temperature, approximately 18–20°C, to fully open up the aromas
- Glass recommendation: A Glencairn glass or a tulip-shaped nosing glass, which concentrates the aromas and provides the best tasting experience
- Serving ideas: Best enjoyed neat, with perhaps a few drops of cold water to open up the whisky and temper the alcohol in favour of the flavour – cask strength bottlings often benefit greatly from this
- Food pairings: Dark chocolate with a high cocoa content, aged cheeses such as Comté or Manchego, or classic Scottish shortbread with caramel
Product Specifications
- Alcohol content: 60% ABV (cask strength)
- Bottle size: 70 cl
- Country/region of origin: Scotland – Lindores Abbey Distillery, Fife
