Introduction
Lochlea Distillery is located in the heart of Ayrshire in south-west Scotland – on the farm where Scotland’s national poet Robert Burns once lived and found his poetic voice. Fallow Edition – Second Crop is a tribute to the rhythm of agriculture, where “fallow” symbolises the resting of the fields after harvest, and “Second Crop” refers to a new vintage of this seasonal release, capturing the melancholic and warm atmosphere of autumn.
Production Method
- Raw materials: Scottish barley grown in the Ayrshire region, closely tied to the farm’s own agricultural traditions and local terroir
- Distillation process: Traditional pot still distillation at Lochlea Distillery, which opened in 2021 and quickly established itself as one of Scotland’s most exciting new distilleries
- Maturation: Matured exclusively in ex-Oloroso Sherry casks, which lend the whisky rich, fruity and spiced notes alongside a deep and inviting mahogany colour
- Special techniques: Bottled at 46% ABV without chill filtration, preserving the full flavour profile and ensuring a natural and authentic whisky experience
Tasting Notes
- Nose: Dark chocolate, red berries and rich sherry notes mingle with warm autumnal nuances and delicate hints of dried fruit
- Palate: Full-bodied and layered with notes of dried fruit, soft leather, anise and delicate rose petals, all underpinned by the characteristic sweetness of the Oloroso casks
- Finish: Long and warming, with lingering notes of spice, dark fruit and a gentle floral touch from the rose petals
Serving Suggestions
- Serving temperature: Room temperature, approximately 18–20°C, to bring out the complex aromas from the sherry casks
- Glass recommendation: A tulip-shaped nosing glass or a Glencairn glass, which concentrates the aromas and elevates the tasting experience
- Serving ideas: Best enjoyed neat or with a single drop of cold spring water to open up the floral and fruity notes
- Food pairings: Pairs beautifully with dark chocolate, aged cheeses, dried fruits and nuts – or as the perfect companion to an autumn evening by the fireplace
