Production Method

• Ingredients: High-quality Scottish malted barley, processed using the distinctive water from the Scottish Highlands near Ben Nevis
• Distillation process: Double distilled in traditional copper pot stills at Ben Nevis Distillery, which is renowned for producing a full-bodied and fruity new make spirit
• Maturation: Aged in a combination of 1st Fill PX (Pedro Ximénez) Sherry Butts and 2nd Fill Oloroso Sherry Butts, imparting a deep and nuanced sherry sweetness alongside the dry, nutty notes characteristic of Oloroso
• Special techniques: Bottled non-chill filtered and without colouring at cask strength, 57.1% ABV, as part of Signatory Vintage’s exclusive 100 Proof Edition series, ensuring the whisky’s full character is preserved intact

Tasting Notes

• Nose: Rich and inviting, with deep notes of dark dried fruits – dates, raisins and figs – complemented by dark chocolate, vanilla and a hint of spice such as cinnamon and nutmeg from the PX Sherry cask
• Palate: Full-bodied and powerful, with a sweetness of honey and dried fruits from the PX cask, balanced by the dry, nutty and lightly oxidative tones of the Oloroso Sherry. Undertones of dark fruit cake, soft toffee and delicate spices
• Finish: Long and warming, with lingering notes of dark chocolate, dried fruits and a gentle oakiness from the cask maturation – a harmonious and satisfying finish typical of well-crafted sherry-matured single malts
